Wild Harvest Berry Honeys: Hand collected by our select Northwest beekeepers, our wildflower honeys are one of nature's rarest and most delicious treats. Each blossom imparts its own alluring scent and flavor to the honey. Drizzle these nectar sweet honeys over homemade biscuits or scones, or use in place of maple syrup on pancakes or waffles.
A note about our honeys: We have chosen to follow a long-standing, old world tradition of not presenting our pure honeys until each has aged more than one year. Pure honey defines itself by the fact that it begins to crystallize usually after about one year. While this aging process depends on the honey’s molecular structure we do know, like old world chef knew, that pure honeys always, without fail, granulate naturally. Honeys that do not granulate are not true, pure wild honeys.
In past centuries a common practice was to sell honey blended with sugar water or corn syrup. Only pure honeys would granulate so to avoid being sold diluted and adulterated honeys, old world chefs always insisted on certified aged honey. This was the true test 500 years ago. It’s our true test today.
Just heat your honey in its jar for several minutes in a small pan in an inch or so of warm water at a low temperature. You can also heat your honey in an oven or microwave for several minutes (remember to take off the lid if you place the honey jar in a microwave.)
Better yet, just serve your honey on your favorite foods. Don’t worry about the crystals; they are a natural sign of a pure honey.
Our Wild Olympic Blue Huckleberry Honey is full bodied with an intense yet spirited character, which is unmatched in flavor. Like our Wild Red Huckleberry honey, our wild blue honey comes from the rugged Olympic Mountains of Washington State and is one of the rarest pure honeys available anywhere. Our interpret beekeepers leave their bees and hives just a little while longer toward the end of the huckleberry bloom so that often honey bees include just a hint of other wild blossom nectar. We often find that our favorite wild bears have got the best of our Wild Blue Huckleberry Honey.
